Jamie is a Michelin trained chef with 18 years experience. His wanderlust cuisine and holistic approach is inspired by macrobiotic and ayurvedic philosophies. Jamie has an extensive repertoire of recipes inspired by his culinary travels all over the world. From Gordon Ramsay, Michael Caines, Thomas Keller and Heston Blumenthal to Marcus Wareing, Jamie has been fortunate to ride the helter-skelter of fiery kitchens, and earn his stripes under the tutelage of these super Michelin star chefs. However, it was a deep-rooted passion for the philosophical essence of food and nutrition that led him to his current holistic approach. Born and raised in West Ireland, Jamie had an abiding interest and appreciation of vital aspects of nature’s cornucopia. He grew up beside a botanical and wildlife rich ecosystem, consisting of a pristine raised moorland with adjoining Turlough. It was here where Jamie first foraged for wild mushrooms and edible plants. This is where his love and appreciation for food and nature was instilled. After four years as executive chef over luxury hotels and achieving many awards, scholarships, and global collaborations with respected chefs under his belt, Jamie’s holistic preoccupation and conviction imparted a renewed creative energy boost to his professional and personal life.
