Mike and Josh have worked in various restaurants from bistros to Michelin-starred restaurants in both the Midlands and London and their expertise in both classic and modern techniques work perfectly to create dishes that suit every taste, style and cuisine. They strive to use the most local and best ingredients of the seasons taking care to bring the best out of them. They liaise closely with their suppliers which allows them to take advantage of the best nature has to offer, be it top quality beef to the humble carrot. They love what they do and are more than happy to create bespoke menus to suit everyones needs whilst taking care to stick to their ethos of classic flavours with a modern twist. Josh has also trained as a cocktail barman and sommelier and therefore has knowledge that encompasses the whole experience, meanwhile Mike has honed his skills working in all sections of the kitchen, with his speciality being the pastry section.
